Fast and Easy Meatloaf Recipes

Meatloaf has to have the right consistency and flavor and here in the South, cornbread is commonly used rather than ordinary bread crumbs, which gives meatloaf the perfect consistency.

Of course, there are a number of variations when it comes to meatloaf as far as flavor and style. Some prefer gravy style, some prefer tomato sauce, while others like just plain old meatloaf.

Onion & Mushroom Meatloaf With Gravy:

– 3 pounds ground beef 
– 1 medium size onion and finely chopped 
– 11/2 cups of crumbled cornbread 
– 1 teaspoon salt 
– 1 pack of onion soup mix 
– 1 egg

Using your hands, fold everything together and blend well. Mold mixture into a loaf and put in into a loaf pan. Bake at 350 degrees for 45 minutes.

For those who prefer their meatloaf plain, you’re finished. Take the meatloaf out, slice and serve. If you like gravy with your meatloaf, bake for 40 minutes, take the meatloaf out, pour off the fat, and pour the gravy over it. Put the meatloaf back into the oven and bake another five minutes.

How to make the gravy:

Canned gravy is actually pretty good as the meatloaf has so much flavor that it blends with it. It’s also mush faster. But if you want to make your own, heat about 1/4 cup ofcanola , or whatever kind of oil you prefer, in a skillet. Add 1/4 cup finely chopped onions and and saute about a minute or so then add a tablespoon of flour and brown it. Add two cups of water and stir until the gravy thickens. You can use milk or part milk if you prefer creamier gravy.

Italian style meatloaf recipe is basically the same except you add one finely chopped clove of garlic (or 1 tablespoon of garlic powder), a teaspoon of oregano, one peeled and finely chopped tomato (or half a can of drained chopped tomatoes), 1/2 cup finely chopped bell pepper, and a teaspoon of sugar to cut the acid in the tomatoes.

Instead of gravy, use tomato sauce or create your own using a can of chopped, Italian-style tomatoes, 1/4 cup olive oil, a teaspoon of oregano, and a teaspoon of sugar. Italian-style is also good with a little mozzarella cheese melted over the top.
